* Lead, motivate, and supervise culinary and stewarding teams
* Organize and prepare pre and post mis-en-place for all meal periods and banquet event
* Prepare, cook, and present appealing and appetizing dishes promptly
* Prepare and display buffet food items according to Food Safety standards.
* Food preparation meets recipes and food safety standards
* Food products are of consistent quality and stored per the food safety standards
* Assist in positive outcomes from guest queries in a timely and efficient manner
* Controlling costs, improving profit, and other departmental and financial targets
* Food production areas “Clean As You Go” and ensure no cross contamination
* Organize daily / weekly kitchen cleaning and sanitation
* Report maintenance, hygiene, and hazard issues
* Prepare necessary operation records documentation
* Plan and organize daily menu requirements for banquet and holiday events
* Assist in weekly staff manning/scheduling per business needs
* Conduct chefs' and stewards' training in compliance with the company procedures
* Assist and conduct food inventory, food rotation and management, receiving quality inspection, and all temperature logs for the cold storages
* Comply with hotel security, fire regulations, and health and food safety regulations
* Keeps Executive Chef and management inform, attend weekly operation meeting
* Assist other departments wherever necessary and maintain good working relationships
* Always maintain a friendly and warm demeanor
* Comply with Hotel’s standards and regulations to encourage safe and efficient operations.
