Under the general supervision of the Director, the cook is responsible for the overall supervision of food, planning, dish washing, cleaning equipment, completing appropriate documentation, and the overall sanitation and safety of the kitchen.
He/she is required to learn and understand the provisions of the Child Care Food Program.
Essential Functions:
Maintain safe and sanitary kitchen, pantry and storage area and washes items used for food preparation.
* Practices safe food handling techniques in food preparation and storage.
* prepares nutritious meals and snacks for enrolled children; prepares substitute items for children on restricted diets and distributes food to classrooms.
• Maintains inventory logs and accepts and confirms Kitchen product shipments.
• Verifies food and non-food purchases to meet food program guidelines.
• Plans and purchases all food and supplies needed to provide food service.
• Keeps a daily meal production record following the requirements of the CCFP using the Simplified Food Buying Guide (SFBG) to calculate amounts.
• Obtain and retain manufacturers’ specifications (or Child Nutrition Label) for any commercially prepared food items not listed in the SFBG.
MINIMUM REQUIREMENTS:
• One-two years of progressive experience as a cook in a professional institution.
• Must hold a valid Los Angeles County food handler’s permit .
• Possess basic arithmetic and record-keeping skills.
• Must have training in menu planning, inventory control and equipment use and maintenance.
• Must have some knowledge or ability to learn CACFP rules and regulations in the preparation of daily meals.
• Must have knowledge of proper food handling, sanitation and safety.
• Must know the proper methods of preparing, cooking and serving food.
• Must have knowledge of Early childhood nutrition.
PHYSICAL DEMANDS/WORK CONDITIONS: \* Must be able to work in heat,
• Must be able to lift heavy objects weighing up to approximately 60 pounds.
• Frequent standing, walking, reaching with arms and hands, bending and climbing.
• Must pass fingerprint clearance test for all appropriate agencies.
• Vision abilities include close vision, distance vision, depth perception, and ability to adjust focus.
