The Butcher is responsible for delivering the highest level of service and satisfaction by trimming and preparing standard cuts of meat per restaurant guidelines.
The butcher will process and stock a variety of quality meat and meat-related items in a careful, clean, neat, and expedient manner; ensuring that product is fresh and appealingly prepared for our customers.
DUTIES & RESPONSIBILITIES
Handles trimming meat; using knifes
Ability to prepare meats, control menu portions and food presentation to Company standards
Responsible for preparation, setup, break down and cleaning of workstation
Comfortable with delegating duties
Perform inventory, ordering and receiving
Maintains sanitation of kitchen and equipment
Set up sanitizer buckets and towels
Check meat slicer to ensure it is working properly
Temperature checks of all reach-in and walk-in coolers
Temperature checks of reach-in freezers
Ensure all products are labeled and kept 6’ off the ground
Double check all newly prepped items are properly labeled
Take out the meat that will be prepped
Break down the boxes and throw away
Take apart and wipe down meat slicer with sanitizer
Disinfect prep surface areas
Ensure all knives are properly washed
Sharpen and adjust cutting equipment
Sanitize butcher room from floor to ceiling
Wipe down walls and stainless surfaces
Wipe down window with Windex
Wash cutting boards to air dry
Wipe down and clean sink
Sweep and mop floors
Check walk- in cooler for cleanliness
Clean and wash all rubber floor mats
Empty and wash all sanitizer buckets
EDUCATION & EXPERIENCE
2 years minimum kitchen experience
Familiar with cuts of meat and supervise/monitor quality of meat
Accurate knife skills working with precision and efficiency
Knowledge in storing ingredients preferred
High School/GED or higher education preferred
